It was HUGE! In my opinion perhaps a bit too big for a single cake, but it was moist and so noone complained about the size. My only criticism is that I didn't grate the ginger finely enough and it was a bit stringy in texture. But noone else said that, only me!
A good variation on a carrot cake.
This carrot cake is my favourite recipe by far, i even skipped meals so i could warrant eating more of it! werll done jem! x
